whats the 411 on hanging these birds. an old timer told me that as good as they are freshly dressed, they are totally different and better if u "hang" them for several days after killing them and bleeding them. "hang" as in leave them still in feathers and dont butcher them or touch them till they ripen a bit.

some hunters on here....im looking for length of time and temperatures as well. thanx!

I always have cleaned mine the same day as they were shot then soak in salt water over night then rinse with cold water then freeze and/or eat

Yeah i clean & cook same day with any bird, except turkey i will clean and freeze or refridgerate depending on when gonna cook

The fella that got me into bird hunting advised me to wash them well(with salt water if you wish) and freeze them in a ziplock bag full of water. Squeeze the air out so there is no air to the meat. This eliminates the risk of freezer burn.
It is a great tip, I done this with both quail and pheasant and enjoyed the birds a year later with no odd taste.
