I am sure Casey will know more but I would recommend looking in to some of the marked and mapped trails in Red River Gorge. There are tons and tons of trails that are for exactly what you are talking about. As beautiful as "the narrows" is to drive across and hike beneath, the trails in Red River Gorge offer much better scenery in my opinion. I hiked "Auxier Ridge" with a friend a few years ago. It was a great hike and the scenery was breath taking. Also, you can pick a named hiking trail and tell your family exactly where you will be in case of emergency...
